Taste and add if you feel he still needs it. I continued to boil for about 10-15 minutes, I checked the taste, I added salt and green larch. I let it boil for another 2 minutes and I stopped the fire. Are you going to say tarragon and larch? My mother also got into my soup with her larch.
You can omit larch or tarragon, leave only the greens you like.
Serve hot bean soup with peasant bread and red onions.

Fasting bean soup
Bean soup is one of my favorites. Maybe you want to try it in the meatless version (hard to accept by my husband :)).
- 300 & # 8211 400g beans (dried)
- 2 carrots
- 1 parsley root
- 1/4 celery root
- 1 parsnip
- 1 red pepper
- 1 onion
- 250ml tomato juice
- fresh leustean
We soak the beans in cold water the night before.
Then we throw the water, we add another one, we put the pot on the fire and after a few boils we throw the water. We fill the pot on 3 quarters with warm water and let it boil. When the beans are half cooked, add the cleaned and diced vegetables.
We cut the onion only at the end where the roots grow and we boil it, we add salt. We tie the larch (so we can take it out at the end) and boil it in the pot. When the beans are cooked, separately we make a rantas from 3 tablespoons of oil, 1 tablespoon of flour and broth. Put the oil in a saucepan, when it heats up, add the flour, stir continuously until it dissolves and then add the broth. It's not healthy, but what to do if that's how our grandmother taught us :). You can give up the rantas and just add the broth to the soup. Add the rantas to the soup, let it boil for a few more minutes and then turn off the heat.
Serve with red onion salad.

Cabbage juice soup
Ingredient: beef, 3 carrots, 1 celery, a handful of peas and beans, 1/2 onion, 2 cloves garlic, a piece of leek, a potato, a cup of cabbage juice (die), salt, 2 tablespoons of broth, 2 tablespoons oil, parsley and larch leaves
Cut the vegetables into very small cubes, sliced garlic and leeks as well.
At first, fry the onion, garlic and leek in two tablespoons of oil, then add the meat cut into pieces and mix with a wooden spoon. Add a liter and a half of water, a teaspoon of salt, put the lid on and simmer until the meat is almost cooked. Carrots and celery are added to the soup, followed by peas and beans, the last being the potato. When all is cooked, pour the cabbage juice (which gives it a special flavor) and the broth, let it boil and if necessary, a little salt. Extinguish the fire, sprinkle with green parsley and larch.
It can be served with sour cream, hot peppers or plain with a slice of fresh homemade bread.

In Transylvania, where I come from, the soups are more sour with cabbage juice than with borscht. At least in my area they do. Although my favorite sour soup with cabbage juice is meatballs, today I give you the recipe for chicken. However, you can do the same principle with hairpins.
During the winter, every time the parents come to visit, they bring with them clearly in their luggage and cabbage juice from their own production. If you do not have it at hand, then you can buy it from the sellers in the market.
