- 4-5 potatoes
- 1 onion
- 2 peppers
- 2 carrots
- 1 celery root
- 400 g of beef muscle

Wash the beef muscle in 2-3 waters and bring it to a boil in salted water. Foam until the juice is clear.
Cover the dish and let it boil for about 45 minutes, then chop the vegetables finely and add to the soup, except for the potatoes.
After 30 minutes, you can put the diced potatoes, season with salt and leave the pot on the fire for another 20 minutes.
After boiling, remove from the sieve and allow to cool for a few minutes. The onions and peppers are separated from the other vegetables and discarded, and the rest are cut into cubes and put in the juice in which they boiled.
The beef is also cut into cubes and placed over the vegetables in the soup.
Add the tomato juice and cook for about 30 minutes. Season with salt and pepper, as desired
How to make the best beef soup?
For this soup I used boneless beef although the best option is the brine. But you can use antricot with bone, beef goose with bone, beef pulp or veal pulp. As for vegetables, there is no guide to follow here. Besides onions, celery, parsnips and potatoes you can use any vegetable you like.

- Fill a pot with cold water, add 2 teaspoons of salt and pieces of beef.
- Put the pot on low to medium heat and cook the meat for about 1h30m. While boiling, remove the foam formed on the surface.
- When the meat can be pierced with fuculita, add finely chopped onion, carrots, celery and parsnips cut into small cubes.
- Cover the pot partially, reduce the heat a little (the soup should not boil in large pots) and cook it for another 15 minutes or until the roots are half cooked. Add the potatoes and chopped peppers and cook the soup for another 10 minutes.
- Add the beans, peeled and peeled, the tomato juice and the borscht boiled before.
- Boil the beef soup for another 10 minutes, then turn off the heat, add the larch and parsley and cover the pot with a lid.
