Cool and refreshing summer sippers that are easy to make and fun to drink

When the weather is hot and you're hosting guests, wouldn't you rather be relaxing outside on the patio than stuck inside carefully concocting fancy drinks?

That's why we came up with these three simple cocktail recipes featuring the refreshing flavors of the season. They may not be the hippest or most complicated cocktails on the block, but they are delicious nonetheless — and pretty straightforward to make. They’re ideal to serve on those lazy summer afternoons when you want to kick back with a drink and your friends.

While we love to order an old timey, throwback cocktail when we’re out, we don’t stock Aperol, grapefruit bitters, or Amaro in our home kitchens. Thus we’ve developed recipes that are quick to concoct and thrilling to drink. Plus, each drink is made with ingredients that you can easily find — perfect for all those last-minute soirées. They’re so good, we think you’ll find yourself making them again and again.

This easy-sipping drink created by famed bartender Erick Castro proves bourbon isn’t just for boozy, stirred drinks. The original calls for muddled strawberries, but this version uses homemade strawberry syrup.

1 750-ml. bottle bourbon
12 oz. strawberry syrup (recipe to follow)
9½ oz. fresh lemon juice
12 to 16 dashes Angostura bitters
Ginger beer

• In an iced pitcher or beverage dispenser, combine the bourbon, strawberry syrup, lemon juice and bitters. Stir approximately 2 minutes to incorporate.
• Top with ginger beer and serve over ice.

Strawberry Syrup

2 cups white sugar
2 cups water
1 pint fresh strawberries

• In a saucepan over medium heat, add the water and sugar and cook until sugar dissolves, about 5 minutes.
• Add the strawberries, then bring to a boil. Reduce heat to low, cover and simmer 15 minutes.
• Remove from heat, keep covered and let sit 15 minutes. Strain into a glass container and refrigerate up to four weeks.
